Sweet malted crust, spicy tomato sauce. Heaping topping on bottom cheese on top. Our hommage to Harris Pizza in Rock Island, IL.
Ingredients
- Flour (12.5-13.5%) 400g
- Water (Room Temp) 220g
- Yeast 1g
- Sea Salt 8g
- Veg Oil 20g
- Sugar 10g
Instructions
- Combine flour, sugar, and salt in a bowl.
- Dissolve yeast in water, then add to dry ingredients.
- Add oil and mix until dough forms.
- Knead for 5-7 minutes until smooth and elastic.
- Let dough rise, covered, for 1-2 hours or until doubled in size.
- Preheat oven to 500°F (260°C).
- Roll out dough thin and place on a pizza screen.
- Layer toppings first, then cheese on top.
- Bake for 10-12 minutes until crust is crispy.
- Cut into strips and serve.
